Warm and cheesy Turkey Spinach Artichoke Panini.
I can’t believe I’m going to admit this to you all but… I have “gamer’s thumb”!
Now don’t go assuming that I stay at home playing video games all day long. I am definitely NOT a gamer. Nick has to practically beg on his knees to get me to play. I’m already a little embarrassed that I’m in my mid-twenties and have this… condition? We’ve had a Wii for a few years and have played the sports games a little bit here and there but since I usually lost I never really liked it too much. Anyway, Nick’s mom gave us Super Smash Brother’s for Christmas and Nick loves that game so I consented to play with him a few times over the break and apparently I hold the remote wrong (along with pretty much playing the whole game). Oh bummer! Looks like I’ll just have to sit out for a few weeks.
K so let’s talk about this amazing sandwich. I absolutely LOVE warm sandwiches! That crispy bread on the outside with that warm meat and melty cheese on the inside… now that’s a satisfying lunch!
During the holidays when we got together with family we decided to have a fun dinner of soup and sandwiches using this awesome Cuisinart Griddler that can be used as a panini press (among other ways) that my mother-in-law got for Christmas… and I already have it on the top of my Christmas list. The sandwiches were a huge hit among the 10+ adults and even the kiddos.
We made all different kinds of sandwiches but this Turkey Spinach Artichoke combo was my favorite and since I recently made Spinach Artichoke Dip I just had to make this panini again. Definitely a great choice! I hope you enjoy it as much as me!

You aren’t the only one with a “gamer” thumb. I like to play video games too. I also love to watch my hubby and son play them. Your not alone. This sandwich looks out of this world amazing! Pinned!
