Cool down this summer with a slice of this sweet, simple, and refreshing Strawberry Icebox Pie!
You know you’re addicted to a show when you WANT more laundry to fold just so you can sit in front of the tv while folding. I’m officially addicted to the show Fixer Upper. While the kids were napping I folded laundry with my eyes glued to the tv and was super bummed when I reached the bottom of the basket. And not only am I addicted to the show but now I want to redecorate my whole house… but that’s not in the budget. Sigh. One day! For now, I’ll just enjoy some refreshing Strawberry Icebox Pie!
But for real, I love love love her rustic but modern style. I’m tempted to move to Waco so we can get them to renovate a house for us. Though I would have such a hard time not keeping all the furniture and decorations she uses to stage it. I just love how everything is so light and bright, a lot of which is due to tearing down walls to open up the rooms and let the natural light come in. Natural light does wonders and unfortunately our townhouse only has windows facing east. Okay, there’s a tiny one in the shower but that doesn’t really count. It makes it especially tricky for my food photography especially since the time I can shoot is in the afternoon when the kids are napping. Really, what I look forward to most about one day owning a home is having windows on all four sides. Natural light just makes me so happy!
Strawberries and ice cream also make me happy and are both so refreshing so why not enjoy them both in this yummy ice cream pie? I’m just dreaming of enjoying this in my future Joanna Gaines decorated home looking out a west facing window watching the sunset. A girl can really dream!

This pie is so tall and full of strawberries goodness- and as a bonus, it slices so cleanly! 🙂
