Pizza is a party food and we definitely have reason to eat this Pizza Pasta Salad and celebrate. My husband, Nick, finished his 3rd year of medical school! Wahoo!!! Just one more year of school… and 5+ years of training left. Who’s counting? But really, I’m so proud of him for working hard and doing so well… and I’m proud of myself for surviving! Third year was rough. His long hours at the hospital + studying + a new baby + a crazy toddler was exhausting but our kiddos could’t make us happier. Well, if they always slept through the night, that would make me happier. ha!
It seems like Nick’s been in medical school FOREVER but it also seems like we moved to Omaha yesterday, not knowing anyone, with a newborn to start this journey. Now we have a 3 year old, almost 1 year old, a growing blog, almost a doctor, and many amazing friends. It makes me so sad we only have one more year here with them. We had to say goodbye to two of our friends in the last month so we have been getting together much more.
We often have potlucks with our friends because everyone loves food and the kids can run around together! We made sure to have a potluck the night before our friends left so we could say goodbye and so they had something to eat since everything was packed. I brought this Pizza Pasta Salad which was so easy to throw together and I was able to make it ahead of time. I love when I can make something ahead of time because getting out the door with a toddler and baby stresses me out and takes forever. Luckily my 3 year old can now put her shoes on all by herself. Even one less thing to do helps!
This pasta salad is seriously delish! I’m obsessed with the baby pepperoni, as is my daughter who kept sneaking them. And the fresh mozzarella pearls, so so good! Everything from a pizza is in this pasta but cold. Perfect for a hot and humid day!
