From my last post you already know that I LOVE baby spinach. It’s my favorite green for a salad, but you can really make anything taste good coated in dressing. But for reals, baby spinach is awesome because you can use it for more than just a salad. I buy that big 1 pound container from Costco and throw it in Creamy Tomato Chicken Florentine Pasta, salads, and even smoothies like this Pineapple Spinach Green Smoothie! And this green smoothie recipe is the best!
Green smoothies are all the rage and this this one you can’t even taste the spinach at all! All you taste is sweet fruity goodness.
Now, my philosophy is that every smoothie needs a banana and some yogurt. The banana adds to the sweetness and creaminess. In berry smoothies it also helps cut the tartness.
The yogurt helps make the smoothie nice and creamy and sweet as well. I buy the 32 ounce container of Vanilla low-fat Greek yogurt. It’s packed with 18 grams of protein per cup so you’re getting both a good source of calcium and protein. Score!
Ya know what else is awesome about this smoothie? Kids LOVE it! My daughter thinks it’s so cool that it turns green when we put it all in the blender and mix. A way better snack option than fruit snacks that disappear in less than a minute and leave her begging for more food because she’s still hungry.
Even though it’s still 40 degrees out, my daughters and I have been in the habit of making a smoothie for our mid morning snack. Carly helps me put all the ingredients in the blender and she pushes the button and we all watch the magic of it.
Grandma gave my girls these awesome cups that have become their “smoothie cups” so I fill their cups up halfway and whatever’s left I get.
Tools used to make this Pineapple Spinach Green Smoothie:
Wolf Gourmet Blender– This blender is amazing! It a power house that can blend anything. I love it and use it for everything from smoothies, to soups, to dressings.
KitchenAid Blender– If you’re not ready to commit to a high power blender, this one is great! This one served me well in making smoothies and pureeing soups and sauces for 8 years.
Measuring Cups– I love these measuring cups! It has every single size measuring cup and spoon. I can’t stand sets that don’t come with 2/3 and 3/4 cups!

Pineapple Spinach Green Smoothie
Ingredients
- 2/3 cup low-fat vanilla Greek yogurt
- 1 banana
- 1 cup pineapple
- 1 cup fresh baby spinach, packed
- 1/4-1/2 cup apple juice, or skim milk
- Ice, optional
Instructions
- Place all ingredients in a blender and puree until smooth. If using frozen fruit you'll probably need to use 1/2 cup liquid instead of just 1/4.

I was skeptical about the spinach flavor over powering the smoothie but I can’t even taste it and I used unflavored almond milk. My kid is a big picky eater and won’t even consider any veggies but will drink any smoothie. This taste great and he loves it. Good way to get more greens into a kid without them knowing they’re getting it.
