I know a lot of you have resolutions to eat healthier this year and the best place to start is with breakfast. Don’t even think about skipping it or eating a Pop Tart. Grab some berries, nuts, and yogurt and make a Nuts About Berries Smoothie Bowl!
It’s no secret that I LOVE dairy. I eat it daily– milk with breakfast, cheese on my sandwich, cream in pasta sauce and ice cream, and butter in my cookies. I’ve been very fortunate to not have any food allergies but I’ve had close friends who are lactose intolerant or have had to cut out all dairy for a whole year because their nursing baby couldn’t tolerate it. When I hear of people like this I think “Oh. My. Gosh! I could never do that! What would I eat? I’d have to give up so many delicious foods!” But then I remember 1)- Asian food! and 2) dairy replacements to create awesome high-calcium breakfasts like this smoothie bowl. You can find plant-based, dairy alternative products like Silk and So Delicious in the Natural Foods Department of your local Kroger store. Will you just look at all those options?! Seriously took me forever to decide which one to get because I wanted to try them all! Whether you’re allergic, lactose intolerant, nursing a baby with food sensitivity, or just don’t want to consume dairy, there are so many great delicious alternatives! Most of the alternatives have a similar calcium level as dairy products but not always as much protein unless it’s a high protein line.
And along with tons of bins of nuts, seeds, granola… you can make your own various nut butters! So cool!
Back to this gorgeous smoothie bowl though. The smoothie is made up of frozen mixed berries, banana, Silk’s dairy free yogurt alternative, and Silk almond milk. So refreshing and perfectly sweet.
And then there’s the toppings. I love how beautiful fruit and nuts are! I highly recommend roasted nuts. Have you ever roasted your own? Just get some nuts in the baking aisle, spread them on a pan and bake for 8 minutes and the flavor is enhanced and the nuts become the perfect texture. Gosh I’m nuts about this smoothie bowl! Sure you could skip all those toppings and eat it in a glass if you’re in a rush… but the fresh berries and crunchy nuts are the best!
