I was on the fence about getting an Instant Pot pressure cooker but I’m so glad I did! It is unbelievable how fast this thing cooks food. I’ve found that you can cook some things together which also cuts down on dishes. (happy dance!) Just toss quinoa, chicken broth, and chicken in the pot and in less than 15 minutes you’ll be eating perfectly cooked Greek Chicken Quinoa Bowls!
How to Cook Chicken and Quinoa in the Instant Pot
It is amazing how fast the Instant Pot can cook chicken. What’s even better is that you can cook it with quinoa or rice at the same time! Just place 1 cup of quinoa (or rice) in the pot with 1 1/2 cups chicken broth. You can use water but the broth gives it more flavor. Then cut up the breasts so each piece is the size of a deck of cards. Sprinkle on the seasonings, close the lid, set to seal, and cook on high pressure for 6 minutes. It takes about 7 minutes for the pot to come to pressure but once the 6 minutes are over you can do a quick release and dig in.
You can really put whatever spices on the chicken that you want or have. I chose to make this Greek-style, piled with all the delicious toppings you’d find in a Greek salad or Gyro. And of course I remembered to top them with Feta cheese after I cleaned up and started eating one. Story of my life… or blog.
If you are like I once was, you may be thinking “I’m a stay at home mom. I don’t need meal prep meals.” Well, you can totally eat this right away. And I mean you can be eating this in 20 minutes from when you pull the chicken out of the fridge. That fast!
But even if you’re at home all day, having a healthy meal that is ready to go is a life saver! I remember when I had just become a mom of two and I found myself forgetting to eat lunch on many occasions because I was busy trying to keep up with the needs of my toddler and infant and then when I got a chance to breath I didn’t have the energy to make anything healthy.
My husband loves when I prep these for him to take to work at the hospital. His lunch breaks aren’t really “breaks”. Time off the floor is spent in a lecture or presentation and during that time is when he can eat. He doesn’t usually have a chance to stand in line and wait for the microwave and this tastes just as good cold as it does warm, if not better!
You are going to love this protein packed meal! I mean, each bowl has 42 grams protein thanks to the chicken, chick peas, quinoa, and Greek yogurt in the tzatiki sauce and less than 500 calories. If your New Years goal was to eat more veggies, lose weight, put on muscle… you’ve got to make these!
Tools used to make Instant Pot Greek Chicken:
Instant Pot Pressure Cooker– As much as I love my slow cooker, you can make things way faster (1/8 the time!) in the pressure cooker. It’s truly amazing! You can make anything in it from soup to rice to fall-off-the-bone tender ribs.
Knife Set– I got this when I got married almost 8 years ago. I use them multiple times a day and they’re still going strong!
Cutting board– I love having various sizes of cutting boards and these are awesome because they won’t slip and slide around on the counter.
Meal Prep Containers– The meal prep containers pictured are from my local grocery store but these ones are similar. You can toss them or wash them to use again.

Instant Pot Greek Chicken Quinoa Bowls {Meal Prep}
Ingredients
- 1 cup quinoa, , uncooked
- 1 1/2 cups chicken broth
- 1 pound boneless chicken breasts, , cut into 7-8 pieces
- 2 teaspoons Greek seasoning
- salt & pepper
- 1 cucumber,, quartered
- 1 cup grape tomatoes,, halved
- 1 cup kalamata olives
- tzatziki sauce (recipe below)
- feta cheese, optional
- 1 can chick peas,, drained and rinsed
Tzatziki Sauce:
- 1 cup Non-fat Greek Yogurt
- 1 cucumber, peeled, seeds removed, grated
- 1 tablespoon fresh dill weed (or 1 teaspoon dried)
- 3/4 teaspoon seasoned salt
- 1/4 teaspoon black pepper
Instructions
- Mix all Tzatziki sauce ingredients together and place back in the fridge.
- Place quinoa and chicken broth in the pot of a pressure cooker. Place the chicken on top, sprinkle with Greek seasoning and salt & pepper. Close the pressure cooker, set knob to seal, cook on high pressure for 6 minutes with a quick release.
- Assemble the meals with equal portions of the quinoa and chicken and then add the remaining toppings. Add a couple spoonfuls of Tzatziki sauce to each and then serve or cover and save for later. (Can be eaten warm or cold. If planning to reheat, leave off the Tzatziki sauce and add after heating.)
