This Corn, Cucumber, & Radish Tartine is a perfect healthy after-school snack for kids and adults!
Well summer is over for us. Nick started his second year of med school (yay! Just three more crazy study years until the dreaded residency… I really shouldn’t be counting down. I hear med school is a breeze compared to residency. Aye yai yai!) Anyway, there has already been lots of “Want to see a really gross picture?!” and one too many urine samples in my fridge. Just one… but that is already past my limit!
I was spoiled during the summer to have Nick home all day as an unofficial assistant chef. Well, really just a spur of the moment aid to my random bursts of “can you do me a favor?” and “Try this. Wha da ya think?” as well as steering Carly away while I finish up a photo shoot. Speaking of Carly, she is getting way mobile and can even grab stuff off the kitchen table! Everything must now be pushed to the middle.
Aren’t radishes one of the most beautiful vegetable!? Love that fuchsia pink! I noticed the cucumber starting to sweat as I was choppin away and thought it looked like it was crying. Food is gorgeous… sorry I have to eat you!
One of Nick’s favorite snacks is toast with butter and sliced up radishes with a little salt and pepper. I thought that was the weirdest thing when he requested it early in our marriage. I don’t think I had ever even tried a radish before that time but he got me hooked to his little radish toast (I really like toast, especially the butter). Anyway, I like cucumber on toast too so I thought why not combine the too and add a little sweetness with the roasted corn and boom: Corn, Cucumber, & Radish Tartines.
What’s a “tartine”? It’s just a fancy word for open-faced sandwich. Well it’s actually French… which makes it fancy. Here in the states we just call it toast with butter (boring!). Anyway, it’s super easy, cute, and delicious!
You can even make the vegetable mixture ahead of time. In just 1 minute of getting home from work or school your toast will pop and you can put on your fancy pants (or maybe just some sweatpants) and feel all sophisticated chowing down on these healthy, crunchy, colorful tartines. Mmmm! Enjoy!

Corn, Cucumber, & Radish Tartine
Ingredients
- 5 slices artisan pumpernickel bread
- 5 teaspoons butter, room temperature
- 1/3 cup radishes, diced
- 1/2 cup cucumber, diced (seeds removed)
- 1/2 cup corn, grilled or roasted is best
- 2 tablespoons cilantro
- 1 tablespoon fresh lime juice
- Fresh ground salt and pepper to taste
Instructions
- Combine radish, cucumber, corn, cilantro, lime juice, and salt and pepper together in a bowl. Set aside.*
- Toast bread and scrape 1 teaspoon butter on each slice. Cut each slice of bread in half and then pile about 2 tablespoons relish on each or allow guest to apply their own. Serve immediately after applying to warm toast.
