Cookie cakes were all the rage when I was in elementary school. I still remember how everyone got so excited when it was someone’s birthday and we found out they were bringing a cookie cake to share. Some even got the deluxe double layer cookie cake! Like whaaaat!?!? It’s so sad that now days you can’t bring treats (even candy!) to school for birthdays. My Chocolate Chip Cookie Cake has been a huge hit so I thought I’d make another variation– Chewy M&M Cookie Cake!
Cookie cakes (and double chocolate cupcakes!) are the best! You don’t have to cook multiple batches of cookies, they’re great for a party, and it has frosting! How could you not want a slice of this M&M Cookie Cake?!
M&M’s are such a fun candy. They have a shiny colorful shell and delicious chocolate on the inside. They’re dangerous little devils! The bad thing is that since they’re so small so you keep telling yourself “just one more” until you find yourself a the bottom of the bag and a tummy full of chocolate. Worth it!
So this variation is quite different than my other cookie cake. The dough for this is more of a sugar cookie dough since it only has granulated sugar, no brown sugar. I also used a different frosting. The frosting is a simple chocolate buttercream but I used half dark cocoa powder and half regular. It’s super yummy but you can definitely just use whatever cocoa powder you have on hand.
To assemble the cookie cake, you just press the dough into a greased pie dish or spring-form pan and then pop it in the oven. Let it cool completely and then run your knife along the edge and the whole thing will pop out to place on a plate or platter. You can also just leave it in the pie plate. Makes for easy transportation!
Then you can pipe on the rich chocolate frosting, top it with more M&M’s and some sprinkles for extra pizzazz. Now you’re ready to slice, serve, and party! And don’t forget the milk! Can’t have cookies without milk.

Glass Pie Plate- This works great for this cake, pies, quiches… I also like to use it when dredging chicken and pork like in my Slow Cooker Pork Chops & Gravy.
Piping Bag- I use these bags and though they say disposable I wash and reuse them.
1M Open Star Piping Tip- My go-to piping tip. Great for cakes and cupcakes.
Cake Stand- This one is great because it has a dome cover to keep it fresh and the stand can also be turned upside down and used as a punch bowl!
Chewy M&M Cookie Cake
Ingredients
- 1/2 cup salted butter
- 3/4 cup granulated sugar
- 1 large egg
- 1 egg yolk
- 1 teaspoon vanilla
- 1 1/2 cup all-purpose flour
- 1 Tablespoon cornstarch
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup m&m's
- 1/4 cup mini m&m's
For the Frosting:
- 4 tablespoons butter
- 3 1/2 tablespoons cocoa powder
- 1 1/2 cups powdered sugar
- 1/2 teaspoon vanilla
- 1-2 tablespoons milk
- m&m's
Instructions
For the dough:
- Preheat oven to 350 degrees F and grease a 9 inch pie dish.
- Beat butter for 2 minutes until smooth. Mix in sugar until fluffy. Add in the egg, yolk, and vanilla until smooth, creamy, and light in color.
- Add the flour, cornstarch, baking powder, baking soda, and salt and mix until combined.
- Mix in the m&m's by hand (they're break if you use the mixer) until evenly distributed.
- Spread dough in the greased pie dish. Bake for 23-26 minutes.
For the Frosting:
- Beat butter and cocoa powder together. Mix in the powdered sugar and vanilla. Add the milk as needed to get desired consistency.
