Trying to stick with your New Years Resolution to eat healthy or shed some pounds? Or on the lookout for a crowd (and self) pleaser salad? Then this Blackberry Orange Sunrise Salad is the salad for you!
Not everyone loves spinach salads like I do but I think it’s safe to say that most people like romaine lettuce. Romaine lettuce is great for salads because it is crisp and holds up fairly well even when weighted down with mouth watering dressing. If you look at the nutrition, it is actually pretty comparable to spinach in that for about a cup it is high (>20% of the Daily Value) in Vitamins A and K and a good source (10-19% of the Daily Value) of Folate. Then you go and throw on half an orange and 1/4 cup blackberries making this salad a high source of Vitamin C and a good source of the mineral Magnesium as well. So there you have it, a tasty, refreshing, colorful, crisp, and nutrient rich spring/summer salad. Enjoy!

Blackberry Orange Sunrise Salad
Ingredients
- 2 cups romaine lettuce, chopped
- 1/2 orange, peeled and cut into 1 inch pieces
- 1/4 cup blackberries
- 2 tablespoons red onion, thinly sliced
- 1 tablespoon toasted slivered almonds
- 2 tablespoons Poppy Seed Salad Dressing
Instructions
- Mix all ingredients together and serve.
