Brownie Fruit Pizza
This recipe is so easy to make and is always a crowd pleaser. I usually make everything from scratch but box brownies hold a special place in my heart and Ghirardelli makes a mix that just can’t be beat… plus they sell a giant pack of six at Costco.
I grew up eating this for almost every patriotic holiday and I sure looked forward to it. The combination of rich chocolate, cheesecake filling, and fresh sweet juicy berries is the perfect dessert for a hot summer’s day.
Ingredients for Brownie Pizza:
Ghirardelli Double Chocolate Brownie Mix– I’ve only ever made this recipe with this brownie mix. It’s insanely fudgy and delicious!
Cream Cheese– This needs to be softened so there aren’t any lumps. This is easily done by cutting it up into 1 inch pieces on a plate, covering with plastic wrap, and leaving on the counter for an hour.
Granulated Sugar– Adds sweetness to your cream cheese layer.
Heaving Whipping Cream– This helps to make your your cream cheese layer light and fluffy like cheesecake. You can substitute it with an 8 ounce container of Cool Whip (use only 1 tablespoon sugar is you do this).
Diced Strawberries– These give the cheesecake layer a little more flavor and color.
Vanilla Extract– Is there any dessert that isn’t better with vanilla?!
Berries– You can use any fresh berries you can get your hands on.
Chocolate– The chocolate shavings are optional. You can use white or dark chocolate.
HOW TO MAKE BROWNIE PIZZA:
- Preheat the oven to 375 degrees F.
- Line a 13 or 14 inch pizza stone (or pizza pan) with parchment paper (I like to trace the stone and then cut it out).
- Whisk egg, oil, and water together in a large bowl and then mix in the brownie mix until combined.
- Pour batter onto the middle of the parchment covered stone (pan). Spread evenly into ~11 inch circle or at least 1 inch away from the edges. Place in oven and bake 18-20 minutes until set. Allow the brownie to cool completely.
- With an electric mixer, beat cream cheese, sugar, and vanilla until smooth. Add the whipping cream and beat until stiff peaks. Scrape down sides of bowl as needed. Stir in the chopped strawberries and spread mixture over the cooled brownies.
- Decorate with sliced strawberries, raspberries, and blueberries. (Optional- brush berries with seedless jam for a glossy look.) Sprinkle chocolate over the top of the berries.
- Chill until ready to serve and then cut into wedges or squares.
What if I don’t have a pizza stone or pan?
If you don’t have a round stone or pan to bake this on you can make it on a large cookie sheet. It will be a little more difficult to make a perfect circle but it will work just as well for baking.
Can I use a different brownie mix?
I highly recommend using the Ghirardelli box mix because it is thick enough that it won’t run off the pan.
If you choose to use another brand, you will need to use whatever egg, oil, and water amounts are suggested on that box to mix up the batter. Be sure to use a box with about 20 ounces of mix.
TOOLS USED TO MAKE THIS BERRY BROWNIE PIZZA:
- Pizza Stone– I’ve had my stone for 10 years! It is the absolute best way to make pizza and so worth the $20.
- Parchment Paper– This makes clean up and transferring desserts so much easier.
- Pizza Pan– This is the best metal pan for pizza. With this brownie pizza you definitely must have parchment paper though since it has holes in the pan.
