For the last couple weeks Carly has been really in to “helping” me in the kitchen. Honestly, it’s increased my stress level by 500%. I can’t turn my back for even a second or she’ll grab a knife, toss the measuring cup into the mixer that is on, add extra baking soda, lick the spatula, steal more chocolate chips, drink the water in the sink of dirty dishes, or draw in the cook book (just to name a few things that have happened). She definitely encourages me to be a faster cooker, though I think things take twice as long.
I recently saw an ad for a product that said “we make master pieces in the restaurant and memories at home.” Amen to that! I’m learning trying to accept that perfection is a thing of the past when it comes to cooking while my daughter is awake. But that’s okay because we are making memories and I get to see her discover and learn… and sneak more chocolate chips together.
So with my new little helper in the kitchen I’m trying to make easier/faster recipes to reduce the chance of Carly getting hurt or me losing my mind. That’s where these potatoes come in. These are super simple to make and taste oh so good. You don’t even peel the potatoes! I made them to go along with ribs. What are you going to serve them with?
